Sesame Chicken


I slept from 5-9PM earlier, which was a surprise to me. I don't normally sleep in the afternoons. I woke up hungry as expected. As it was so late already, everybody had already had dinner. Good thing Jong waited for me. When we checked in the kitchen, there was still some left over sweet and sour hamour. But it was supposed to be Jong's lunch to work the next day. Of course I won't let the hubby go hungry at work! Seriously! The site office was about 30 minutes drive outside of Al Khor, the nearest town, at the edge of the desert without access to transportation. So it is really important that he brings with him a filling lunch.
Having said that, it is now up to me to whip something up for his lunch box. There were a couple of slices of chicken breasts I found in the chiller which actually helped a lot as there won't be any need to thaw it anymore. 
There were also about a kilo of "Sitsaro" (snow peas) which got me excited. The peas came from mom's colleague who had just come back from vacation in the Philippines ---- Baguio for that matter. So you can just imagine how excited I was to cook those peas. Although all I need was just a handful for the couple of breasts. I'll have to get the other ingredients for chopsuey and make sure I cook it tomorrow, while the peas are still so fresh!
Ingredients:
2 pcs chicke breasts (about 200gms), sliced
1 cup snow peas
1/2 carrot, sliced diagonally
3 cloves garlic, coarsely chopped
1 onion, sliced thinly
1 onion, quartered
1 tbs parsley, chopped
2 tbs sesame oil
2 tbs light soy sauce
1 tbs hoisin sauce
1 tsp ginger paste
1 tsp sesame seeds
1/3 cup water
salt and pepper to taste
Method:
Heat oil over medium heat then add garlic. Cook for 2 minutes then add sliced onions and ginger paste.
Put in the chicken and saute until cooked, about 5 minutes.
Add the carrots, saute for a couple of minutes then add the soy sauce, hoisin sauce and water. Simmer for about 3 minutes then add the snow peas, quartered onion and chopped parsley.
Sprinkle the sesame seeds and turn off the heat.
Transfer into a serving platter and sprinkle some more sesame seeds. Serve with hot rice. Enjoy!
