Beef Tripe and Chilies Stir Fry


When I saw the packet of beef tripe at the grocery, my immediate thought was "Batangas Goto" which I was not able to have the last time I went on vacation. You might be wondering why I always mention Batangas with the Goto, it is because our goto is different from how goto's are with rest of the Philippines where it was porridge type, cooked with glutinous rice. In Batangas Goto is just clear soup with tripe, cow's skin and other offals.

I had kept the tripe in the refrigerator after cooking it in the pressure cooker hoping to find the other beef offal ingredients for the goto. Unfortunately without success. There were some available in Lulu Hypermarket on Airport Area, but they were either lamb or  mutton. Of course I wouldn't dare using those, as I would just be trying out the recipe the first time. 
When Jong saw the 2 packets of tripe the other day, there's just no question about it, the tripe is going to be "Papaitan" which is also very similar to Goto Batangas only difference being is that Papaitan is ginger based while Goto is onion based. So we had a nice bowl of Papaitan soup on a Thursday evening :)
Well, I don't have any objections to the Papaitan, except that it is MY tripe! hehe! Yes I'm a bit proprietary about the tripe, given that it isn't easy to get one. So just to be fair, I had let him cook one packet and asked him to leave the other one for me. But days have passed and I still don't have the other ingredients for my Goto so I decided to just cook the tripe yesterday. We had been out most of the day (actually the whole day) and just got home an hour before Jong comes home from work, so I had to cook something really fast. I don't have time to thaw anything from the freezer and the tripe was the closest one to being food in another half an hour. But then I had to think of a way that it could match a plate of hot rice to serve the tired and hungry husband so I decided to just cook it with his favorite chili. Surely whatever it is I put with chili will be good enough for him :)
Ingredients:
Beef Tripe (about 400gms), pre-cooked tender and sliced
1 medium onion, sliced
3 cloves garlic, coarsely chopped
6 chilis, sliced (seeds removed)
spring onions, sliced diagonally
2 tbs cooking oil
2 tbs soy sauce
1/4 tsp ground black pepper
1 tsp tomato sauce
1/4 cup water


Method:
Put wok over medium heat then put the oil. When hot add the garlic. Cook for a minute and add the onions. Saute until onions are limp and translucent.
Add in the tripe, stir fry for 2minutes and pour in the water, soy sauce and tomato sauce. Stir fry for about 5 minutes or until the sauce dries up. 
Toss in ground pepper, spring onions and chilies. Stir fry for another minute and turn off the heat.
Transfer into serving plate and serve with hot rice. This is also an ideal "Pulutan" (I think, as I don't really drink alcoholic beverages but would guess from the looks of it, the hubby would love this with his beer, specially if served on a sizzling plate :) ). Enjoy!
