I never really thought of making my own pancake batter. Whenever I thought of having pancakes, my thoughts would either be Dairy Queen or Johnny Rockets and just recently, Mac Donald's, and that's usually on a Saturday morning to kick off my day of errands with the little girl.
On rare occasions that I felt like having pancakes at home then it would be the boxed pancake mixes in which you add an egg and cook. But really those were very rare occasions, only on instances when I was able to find the Philippine brand pancake mixes on the supermarket shelves here in Doha. I'm not really a fan of the other brands which I find a bit on the dry and rough side.... Or maybe it's just me :)
Just a couple of weeks back, my brother and I were reminiscing our childhood days and of course the topic had swayed into the food we used to eat as kids. We remembered the breakfasts/snacks/lunch our parents bring home from the market (depending on the time they finish and get home). We thought of that ketchup-spaghetti with maybe 5 pieces of meat and 2 pieces of hotdog. The pancit which also has about a piece or two of carrots and cabbages, and the pancake made of flour and water and spread with Star margarine. Yes they were really street food quality, but they were good and we missed them!
This morning when I woke up I felt like having pancakes for breakfast, but being summer already and waking up at 9am isn't really much of a good idea going out and braving the heat. So I thought of making homemade pancakes... I mean how hard could it be? I've already tried making a few cakes (though unsuccessfully) and cupcakes before, so I would think pancakes wouldn't be so hard. And how convenient is it that the laptop was just beside me when I woke up so I immediately checked for an easy pancake recipe. The first one I checked looks good to me, Easy Pancake Recipe posted by Cooking Nook (I'll remember to check other recipes in the site, they also looks yum yum!). I think the recipe calls for fresh milk, but I have used evaporated milk as it's the only thing I have in our kitchen.
Ingredients:
1-1/2 cup all purpose flour
2 tsp baking powder
2 tbs sugar
1/4 tsp salt
1-1/2 small can evaporated milk
3 tbs cooking oil
1 egg
Softened butter
Syrup
Method:
In a bowl, mix all the dry ingredients. Then add the milk, egg and cooking oil one at a time.
Mix well until batter is smooth, try removing the lumps.
Heat the frying pan over medium heat. Pour in the batter, about 1/2 cup for each pancake. I would recommend cooking the pancake one at a time. Adjust the heat to low so as not to burn the pancake.
Cover and cook one side for about 1-2 minutes. Then flip to cook the other side. Cook until lightly browned.
Remove from pan and transfer pancake into a plate. Spread butter and drizzle with syrup.
Best served with eggs and bacons (which I don't have, so I made do with just the eggs :) ). Enjoy!
