This is a very simple dish, easy to prepare and ingredients surely readily available in your home kitchens. This is somewhat similar to our stuffed milk fish, to some rellenong bangus, but instead of milk fish it's tilapia.
I have also categorized this as a single serving recipe since this could easily be prepared for 1, so easy to prepare that any single Expat Pinoy can prepare right after work, you can just choose the size of your tilapia that would be enough for you. :)
Ingredients:
2-3 pieces medium sized tilapia, cleaned
1/4 cup vegetable oil for frying
stuffing:
2 cloves garlic, finely chopped
spring onions, finely chopped
1 medium sized tomato, finely chopped
coriander leaves, finely chopped
salt and pepper to taste
marinade:
1/2 cup dark soy sauce
1/4 tsp white pepper
1 tsp lemon (or calamansi) juice
To prepare the stuffing just mix all the ingredients in a bowl.
For the fish, put the stuffing in the fish stomach. If you have mad an incision to remove the gut, then it would have to be stitched to seal the stuffing.
Score the fish so it would absorb the marinade.
Mix all the ingredients for the marinade and marinate the fish for about 10-15 minutes. Not more, or it would turn out to be too salty.
Put frying pan over medium heat. When hot, put the oil then fry the fish one at a time in smoking hot oil.
Fry underside for about 5-8 minutes before turning over and cooking the other side. Make sure the underside had been thoroughly cooked before flipping the fish to limit turning the fish to just once.
Remove from pan, transfer into a serving platter and serve immediately with hot rice. Enjoy!
Note: This may look like a common fried fish, but there is no more need for a dipping sauce as the stuffing and marinade already is full of flavor and completes the dish :)
