Barbeque Beef Ribs


There was a treasure in the refrigerator! I don't usually know what's inside our refrigerator since my mom and our nanny are the ones doing our weekly shopping at the Abu Hamour Fish Market. So mostly I do the cooking based on what our nanny takes out from the ref before every meal (except breakfast).

As it turned out, there was a treasure in there which she isn't taking out since it was not cut to cooking portions. Seems she does not know the possibilities with that slice of meat, so when I saw it when in a whim I opened the freezer door, instantly I got so excited! I know immediately what to do with it... but how... that's what I need to find out.
First and foremost, I know the meat would be tough if I would just bring it directly into the fire, but then at the same time, I don't want it to loose its flavor and to become dry so I really don't want to boil the meat for a long time first as what we usually do with beef. So I decided to cook the beef in the pressure cooker for about 45mins.

Ingredients:
1 kg beef ribs
1/2 cup barbeque sauce
1/2 cup water

Marinade:
1 cup banana ketchup
1/2 cup soy sauce
1 lemon, sliced
1/2 tsp ground black pepper
2 tbs honey

Method:
Cut the beef to serving pieces and put in a big bowl.
Mix all the marinade ingredients in a separate bowl until all the flavors are well blended, then pour into the bowl with the beef.
Mix well to coat the beef evenly and transfer into the pressure cooker with the marinade. Add the water, seal and cook over medium heat up to 30-45 minutes depending on the cut of the beef slices (single serving sizes can be cooked for at least 30minutes). Cooking the beef in its marinade will let it absorb all the flavors in a much shorter time than setting it aside in the marinate which would set you back to about 4 hours at least to overnight.
Turn off the heat and let it cool down for about 15 minutes more.
Transfer into a  platter and let the sauce drip from the meat. When the topside is dry, turn over the meat to  dry out the underside also.
When the beef has cooled and both sides dry, baste them with the bottled barbeque sauce (you can find these from any major supermarkets, I used the Shop Rite brand).
As the beef had already been pre-cooked, grilling time would only take about 10mins. just to brown the outside and to achieve that good old barbeque aroma (in my case I have put the beef in the oven and roasted for about 10 minutes also, no time to prepare the grill!). Enjoy!
