Baked Salmon


Whenever we out at any of the theme restaurants around town, it would always be either steak or grilled salmon for me, well more often than not it's the salmon since I know I wouldn't be able to finish the steak anyway.
Yesterday, hubby was thinking of eating out so I asked him what he actually wanted to eat. He said he was actually thinking of salmon, so I thought wouldn't it be nice to try to cook salmon at home? Well, there's never a better time than the first time!
Sad thing is, to this day, I still haven't found a grilling pan which I could set up over the gas range. I have been meaning to get those handy electric grills but for some reason, I still haven't had the chance to do so. Could be because most of our barbeque's are done over the weekends and I've got a lot of help to do the grilling outside. But, maybe, one of these days...
In the meantime, here's a very simple way of preparing salmon for dinner. I have baked my salmon with mixed herbs and paired it with an original fried rice recipe. Here's how I prepared it.

Ingredients:
Salmon, 1 whole fillet about 500gms
dried mixed herbs
salt
steak pepper
lemon juice
olive oil
butter
* you will also need a foil sheet for wrapping the fish.

Method:
Preheat the oven to 400deg.
Season both sides of your salmon with salt, steak pepper and dried mixed herbs and drizzle with lemon juice.
Line the foil sheet with olive oil and transfer the salmon. Put  a few butter slices (about 2mm thick) on top of the salmon. It's fine if the butter is frozen and hard, since it would melt anyway once you bake the fish.
Seal the foil to ensure that the juices from the fish and butter will not spill, but leave a little opening on the topside the hot air could freely circulate and the fish will not stick into the foil.
Bake the fish for about 10-15mins.
Remove from foil and transfer into a serving plate (this size of fillet is goof for at least 2 persons). Enjoy!
